Hope you are having a safe and happy one.

 

Looking for a fancy breakfast or dessert to make in 20 mins? Well look no more and yes I call this one fancy because you can simply have this one as dessert too. I have been making these even before the kids were born so I would like to think that I have perfected this. I made the dutch baby for the kids on the weekend, you should have seen their faces, with big smiles. I didn't have to ask them to eat up :).

For breakfast you serve it with extra maple syrup and berries. This is totally optional of course, I serve mine without the powder sugar and the maple syrup.

Now If I were to serve it for dessert, I would totally go for the powdered sugar and add vanilla ice cream to it. I hope you try and and let me know what you think.

Berries Dutch Baby

Prep Time: 15 mins

Cook Time : 25 mins @425 degrees

Serve 4

Ingredients:

3 eggs

¾ cups of flour

¾ cup of milk

1 tbsp maple syrup

¼ tsp cinnamon

⅓ tsp vanilla extracts

½ cups of berries

½ banana (optional)

A pinch of salt

4 tbsp of butter

Instructions:

  • Preheat the oven at 425 degrees.

  • Using a blender, whip up the eggs, milk, maple syrup and vanilla.

  • Add salt and cinnamon to flour, then whisk in liquid to form a batter.

  • Heat butter in a 9 inch cast iron skillet on the stove, then add banana and berries to soften up 2-3 minutes.

  • Pour batter into the skillet and place in the oven to bake until it puffed and golden brown on the edges. It will deflate as soon as it’s out the oven ( this is supposed to happen).

  • You can dust pancakes with powdered sugar OR add lemon curd (optional of course).
