Not sure if it's just me, but I felt like this week was such a drag!
I ask Yash earlier this week what I should make for breakfast, I give him a few options and he choose banana bread with nuts and no raisins and of course Maya's request was cake :)).
I made this banana bread with quinoa flour, guys I swear quinoa flour is so similar to regular flour. If you haven't try it yet you have to.
The great thing about this banana bread is that you don't need a mixer! just grab a bowl , fork to whisk the eggs and a spoon to mix everything together. I use 3/4 cup of coconut sugar in this recipe, if you need it sweeter you can add 1/4 cup more, but it was just fine for me.
You can definitely toss in a cup of nuts, raisins, or chocolate chips if you prefer. I add pecans because that's what I had in my pantry.
Banana Bread Recipe
Prep time: 10 mins Bake: 350 oF
Cook time: 55 mins
Ingredients:
3 bananas
1 1/2 cup quinoa flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
a pinch of salt
3/4 cup of coconut sugar
3 eggs
vanilla
1/3 cup of coconut oil
Instruction:
1. Preheat the oven to 350 oF, and lined a 9 inch pan with wax paper.
2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Add coconut oil and mix together.
3. Mix in eggs, sugar, and vanilla.
4. Add baking soda and salt, then mix in flour.
5. Pour the batter into prepared pan and bake for 50 minutes at 350 oF or until a toothpick come out clean.
6. Remove from oven and cool for 10 minutes, then remove from pan and place on a rack to cool completely before serving. Slice, serve and enjoy!
