Banana Bread Cookies

Hope you are all keeping safe indoors and if your must go outdoors for work; remember to wash your hands :). We are definitely in the times of uncertainly and it can be very stressful. I urge everyone to reach out to friends and family, it makes a big difference. We did a virtual drinks meet a couple of nights ago and it was great!

Today I am sharing a banana bread cookies recipe with you, I made these with the kids. It's just the perfect thing to do because it just calls for a few healthy ingredients and so easy to mix. These banana bread cookies are make without eggs and dairy; but still so good. I baked these cookies Thursday and they are all gone. So I guess I just have to whip up another batch.

Banana Bread Cookies

12 cookies

Cook time: 35 mins

Bake time: 350 oF

Prep time : 5 mins

Ingredients:

1 1/2 cups almond flour

1/4 tsp baking soda

1/8 sea salt

1/2 tsp cinnamon

1 tbsp maple syrup

2 tbsp shredded coconut

1 1/4 cup ripe mash bananas (make sure you measure it)

1 tsp vanilla

1/2 cup raisins

Instructions:

  • Mix all the dry ingredients together (almond flour, salt, baking soda, cinnamon, coconut)
  • Mash the bananas with a fork and add them to the dry ingredients. Do not over mash them.
  • Add in the maple syrup and mix until combined.
  • Using an ice cream scoop onto a parchment lined cookie sheet, flatten, and bake for 30-36 minutes.

Notes:

Oven varies keep an eye on the cookies, when the tops are golden brown and your kitchen smells like banana heaven, take them out.

After couple of days the cookies will get soft, I just popped them back in the oven for 5 mins at 400 oF and they were all good again.
