This is my first time making biscotti and not sure why I shy away from making it for the longest time. It's so easy to make and I fully recommend making your own because OMG the freaking taste so much better than store bought :). It's so good with a great cup of coffee or a glass of milk for the kiddos.
These Biscotti aren't too sweet and adds a very nutty flavour which I like, the cherry adds a great savoury sweet taste. The are made from spelt flour, spelt is an ancient grain that is very closely related to wheat, it is lighter than whole wheat flour and does have gluten in it. It makes for crispy biscotti as long as you store them in an air tight container.
Biscottis are baked twice once in a loaf shape then they the are sliced and baked again.
Spelt Almond Cherry Biscotti
Ingredients:
1 1/4 cup spelt flour
1/3 cup of sugar
1 tsp baking powder
1/4 tsp salt
1/2 cup almond
1/4 tsp salt
1/2 cup dried cherries
1 tsp of vanilla
- Place all the dry ingredients in a bowl, then make a well in the middle and place the eggs and vanilla in.
- Mixed all the ingredients together to form a slightly sticky dough, with oiled hands shape into a loaf 2' x 11' and placed unto a pan with waxed paper.
- Baked at 350 degrees for 20 minutes.
- Remove from oven, cool for 10 mins then sliced with a serrated knife and place slices on a rack on a baking sheet then return to oven, reduce heat to 300 degrees and bake for 25 minutes.
- Remove from oven and cool, store in an air tight container to retain the crunch.
Note: if you cannot find spelt flour you can substitute by using 3/4 cup of all purpose and 1/2 cup whole wheat flour instead.
I would recommend to chop the almonds with a knife before you mix dough.
