Honey brioche bread.
I have been making bread for years; it was only time that I tried brioche bread. It’s kind of similar to making pastry dough or croissants. It’s pretty simple but takes time. This bread will have your home smelling like buttery goodness. It is buttery, light, soft with a hint of sweetness. It’s great for making french toast or even on it’s own.
I am mostly Gluten Free but OMG the smell, I couldn’t resist having a slice. It was so delicious, it tasted like croissants, you can never go wrong with French breads.
Ingredients:
½ cup of warm whole milk
2 ¼ tsp instant yeast
¼ honey
5 eggs (4 for dough and 1 for brushing)
3 ½ - 4 cup all purpose flour
1 tsp kosher salt
4 tbsp of room temperature butter
1 ½ sticks cold salted butter, sliced into thin pieces.
Instructions:
In the mixing bowl, combine milk, yeast, honey, 4 eggs, flour and salt, mix well until everything is incorporated, then add 4 tbsp of room temperature butter.
Cover the bowl with plastic wrap and let it rise for 1 hr or until doubled in size. I alway put my dyson heater near it to help the process.
Punch the dough down and roll out into a rectangle shape approximately 12 x 18 inches, if it sticks use extra flour for the surface.
Lay the thin slices of cold butter on one half of the dough, pressing it in gently, then fold the other half of the dough over the butter until it's completely covered.
Roll the dough out in a large rectangle about 12 x 18 inches, Fold in ⅓ of the dough into the center, then fold the other ⅓ over the top of the first layer so that you have 3 layers (looks like an envelope length wise). Wrap dough into plastic wrap and transfer to the freezer for 15 minutes or chill in the fridge for 1 hr.
Prepare 2 (9 x 5) baking pans.
Remove the dough from the freezer, roll dough out into a rectangle shape 12 x 18 inches. Roll the dough into a lodge, keep it tight as you go, then pinch along the edge to seal.
Then cut the dough in half and place the seam side down in pans. Cover with plastic wrap and rise 45 minutes to 1 hr.
Preheat the oven to 350 degrees, brush beaten egg on dough then transfer to the oven for 40 minutes or until dark brown on top. Cool in pan for 5 minutes, then transfer onto a wire rack.
Slice, serve and enjoy.
