Skillet Rolls

I grew up eating rolls for breakfast we called them tennis rolls, a nice warm tennis roll with cheddar cheese with a bit of hot sauce to spice things up, can someone say YUMMY! :))

I figured since we all have to take precautions and stay safe indoors, also to avoid lining up for groceries, why not make these rolls for the kids breakfast. I love making rolls and this is a quicker version of making them; I have made these quite a few times and the kids love them.

This is the easier and quickest recipe you will find making rolls, using the instant yeast really helps with this process. This recipe uses a large amount of yeast to cut the rising time. If your home is on the colder side you can create a warmer space, I have a dyson heater in my kitchen so I usually put that on and place the bowl near it, another way it places the bowl on top of the stove while your oven is heating up.

Ingredients:

1 tbsp or a packet of instant dry yeast

1 cup warm water

¼ cup honey

¼ cup melted salted butter

1 tsp salt

1 large egg

3 cups all purpose flour

Instructions:

  • Preheat the oven at 400 degrees F.

  • In a mixing bowl, combine yeast, warm water and honey, set aside to rise for 10 minutes.

  • Stir in melted butter, salt and eggs until combined.

  • Add in the flour slowly, until the dough forms a ball and pulls away from the mixing bowl.

  • Divide into 12 even pieces and shape into smooth balls.

  • Place into a 12- inch cast iron skillet, cover with plastic wrap and leave to rise for 30 minutes. You can place it on top of the oven to rise.

  • Bake in a preheated oven for 20 minutes until the top is golden brown. Then brush melted butter if desired.

  • Let them cool for about 10 minutes then place them on a cooling rack to cool.
